Shiitake Mushrooms (Lentinula edodes) are both a gourmet & and a medicinal variety. Native to east Asia, they are used extensively in Japanese & Chinese cooking. They add umami to any dish and have a distinctive meaty and nutty flavour. Studies suggest that eating shiitake can moderate blood sugar, reduce cholesterol & lower the risks of getting cancer.
