The King Oyster Mushroom (Pleurotus eryngii) is the largest fruiting mushroom of the oyster mushroom family. Native to the Mediterranean, they are also cultivated extensively throughout Asia. They are dense & meaty, with savoury umami flavours, earthy undertones, and a hint of anise. The mycelium is a living organism & must be treated as such to allow it to thrive & help it to inoculate your substrate of choice.
