Glossary of Wine Terms
Phenolic
There are many phenols associated with wine, including vanillin,
which imbue positive aributes. A phenolic bouquet, however, refers to a pungent
scent that is a peculiar mix of medicine, plastic, rubber and tar. Examples of items
that best illustrate phenolic scent are coal tar (a topical medicine) and acaricus
xanthodermus (an inedible mushroom common in North America). Maybe you
